Like so many of you I am now in home schooling mode and who knows how long life will be like this. One of the activities which the kids will love is baking, so each week I’ll be bringing you a new recipe to make with your little ones.

The first recipe is super easy, so if baking isn’t something you normally try, give it a go.

These cupcakes are a good basic recipe where all the ingredients get mixed together at one time. The cake batter is a blank canvas to enjoy the flavour as it is or add your favourite treats to. My daughter likes to add cocoa powder and chocolate chips to her cupcakes, whereas I like to add a handful of sultanas to mine.

First step is to heat the oven up to 160c and line a muffin tray with cupcake cases.

These are the ingredients you will need to make 12 cupcakes:

6 oz caster sugar

6oz margarine

3 eggs

6oz self raising flour

1 tsp vanilla extract

1 Tbs milk

Once you have weighed all your ingredients, place then in a bowl together, if you have a whisk, beat them until the mixture is fully mixed and lump free. If you don’t have a mixer a wooden spoon is fine, it’ll be a mini workout whilst baking.

Once you have a smooth batter now is the time to get creative and add anything you like or keep it just as it is.

Spoon the mixture into the 12 cases and bake for around 25 minutes, ovens do vary so they may need a little longer. To test if you gently push the top of one of the cakes with your finger the sponge should bounce back and not leave an indentation.

Once baked allow to cool, they can be enjoyed as they are or if you have a budding cake decorator, let them ice them and get creative.

A simple icing is Glace icing, which is just icing sugar mixed with a very small amount of water until you have a spoonable icing but not to runny. Spoon onto your cupcakes and decorate as you want.
